I prefer to do it myself although can understand not that easy for those with kids.
Find decently priced flights first. Skyscanner is a good starting point. Find locally owned accommodation and book direct with them. That way the money stays in the country.
I try to get at least one holiday outside the eurozone as tends to work out cheaper overall even with an expensive flight.
If you want a site then keep an eye on TravelZoo who do a weekly top 20 that are sometimes great deals.
Gone with LCH and OTB and both times ended up flying with Ryanair for more if I'd booked it myself independently. Try doing it all on your own. It really is easy enough.
